MASTER Sushi Chef Fillets Entire Yellowfin Tuna. Tuna scrape, quartering-rolls, & more!
Fresh yellowfin tuna may be one of my new favorite sushi items after this last experience! After a long weekend of offshore fishing in Venice, LA, we packed up one of the yellowfin tuna and several blackfin tuna into our Reliable Fishing Products kill bags and headed back to Birmingham. We were all eager to complete the full cycle of catch, clean, and cook by bringing our tuna to Shiki, our hometown sushi & thai restaurant. What I experienced next was truly awesome…
Every time I had been to Shiki before, or every other sushi restaurant for that matter, I had been served at the table. Going behind the the counter with Chef Marty and learning not only how to cut the fish, but prepare it, gave me a new appreciation of this cuisine. I learned so much about the meat on tuna and how different cuts wind up in menu items at sushi & seafood restaurants. Yellowfin tuna is an incredibly versatile fish when it comes to its meat and all the ways to prepare. One outcome is certain though: when prepared correctly, you’re in for a DELICIOUS experience.
